Oh these were so yummy!  I had an old recipe for Fresh Apple Cake, and I kept thinking it would make great muffins, so I finally tried it.



Recipe
2 cups sugar               1 tsp soda
2 eggs                         1tsp salt
1 cup salad oil            1tsp cinnamon
2 1/2 cup plain flour   3 cups finely diced apples
2 tsp baking powder   1 pkg butterscotch morsels
1 cup nuts (chopped)

Mix dry ingredients set aside
Mix sugar, eggs, and oil in large mixing bowl then add in dry mixture from above
Mix well, batter will be thick
Add apples and nuts and mix well again
Place liners in cup cake pan and fill a little over half full
Sprinkle butterscotch morsels on top of each cupcake liner of batter. (Spread evenly and use whole bag of morsels)

Bake in preheated oven at 350 for about 30 mins.

For cake bake in 9x13 pan for 1 hour. 
Muffins and cake will be very brown but if you go too long the butterscotch morsels will burn a bit.

  1. I can almost smell the cinnamon! It looks so delicious! I've never had any luck with apple cakes, so I think I may give yours a try.

  3. JoAnn, These are really good(images) I can't taste them:) I honestly feel like when you get close to food it is more appealing in pictures. I also think it is good to get down at the level of the food instead of shooting over it and all... These are great!! I am not a pro at Food or anything I am just telling you what I have learned:) SOmething about the out of focus table cloth and not seeing much if it looks good too... What did you use for the collage or did you make it in PS? Very nice and I think you should enter this in the Nov Food challenge if it fits:)
